ABOUT THE RECIPE
The Moroccan table is a blend of flavors and ingredients inspired by the many cultures that are present in the country: berber, jewish, ottoman, european, andalusian and arab. Each one of these cultures has influenced the country's cuisine as we know it today.
Traditionally, Moroccans flavor fish with chermoula; a marinade that is primarily made of chopped parsley and cilantro, combined with a generous amount of warm spices, lemons, and tomato paste.
In this course, the dada is using ingredients that are new to the Moroccan diet, including basil, mushrooms, and heavy cream. However, she is combining them with some traditional fish ingredients such as lemons, parsley, cilantro, olive oil, and peppers. All together, this dish is a fusion of old methods with new ingredients, creating a deliciously unique dish that is sure to be beloved by everyone.
Special tools / ingredients: All ingredients are easily available in supermarkets or online stores.

ABOUT THE CHEF
Dada (Chef) Siham is a professional Moroccan chef with over three decades of experience under her belt. She is a true walking archive of Moroccan culinary knowledge and history.
Chef Siham learned to cook from her grandmother, who encouraged her to attend the best culinary institute in Morocco.
After graduating, she worked as a chef at multiple renown institutions before starting her own business. She has now been running a major catering service in Fez for over 2 decades, supplying weddings, baptisms and other special occasions with authentic Moroccan dishes.
