ABOUT THE RECIPE
Beef Tagine with zucchini and oregano is a beloved staple in Moroccan households year-round.
To prepare this tagine , the meat is first seasoned with a blend of iconic Moroccan spices, then it is slow-cooked with onions and garlic in a pot or pressure cooker until the meat is tender and the sauce has thickened. The zucchini is prepared separately with spices and the broth from the meat sauce until just tender.
In Morocco, dry oregano is a popular herb that is used to to flavor a variety of dishes, such as tagines, salads, or even breads. Oregano pairs especially well with zucchini due to its mild flavors, making it a wonderful addition to this dish.
Upon serving, the meat is elegantly placed at the base of the tagine or serving plate, with zucchini and tomatoes arranged around it. A generous ladle of the meat sauce crowns the dish, and a final sprinkling of fresh oregano adds a fragrant touch.
