ABOUT THE RECIPE
Rfissa with Harcha is a unique and flavorful Moroccan dish that marries the best of traditional cuisine with a twist. Rfissa is a beloved Moroccan meal, often enjoyed during family gatherings and special occasions. It features tender chicken cooked in an aromatic broth infused with the famous Moroccan spice blend, Ras el Hanout. This spice mix, known for its complex and rich flavors, includes a combination of sweet, savory, and spicy notes, creating a delightful taste experience.
What makes Rfissa with Harcha special is the use of harcha, a semolina galette, instead of the more common rghaif (msemen) or trid. The harcha is cooked, then crumbled into a coarse semolina, steamed to perfection, and drenched in the flavorful chicken broth just before serving. This dish is often served to women who have just given birth, as it is believed to be nourishing and beneficial for milk supply.
Rfissa comes in many variations across Morocco. Besides harcha, it can be made with msemen, trid, or even bread. Regardless of the base used, the essence of rfissa remains the same: a hearty and comforting dish where the chicken and broth are served on top of the chosen carbohydrate.
In the region of Gharb, Rfissa is traditionally served with lamb, poultry (chicken or pigeons), or even game. In Benslimane, it is called Madhoussa or Rfissa Ziadia, where harcha is broken up and served with a broth made from milk, butter, and onions. The version from the Middle Atlas, found in places like Khemisset, Oulmes, or Azrou, features beldi chicken and m’ssakhan, a type of Ras el Hanout specific to the region.
