ABOUT THE RECIPE

This chicken tagine with caramelized tomatoes is a unique dish that is native to the Marrakesh region.


Like many famous Moroccan dishes, this tagine has two main components: A savory chicken base, and a sweet topping of caramelized tomatoes.

The chicken is cooked the way all tagines are made, with lots of onions and warm spices including saffron.

The caramelized tomatoes are made by first grating ripe tomatoes. The skin is discarded, and the pulp is caramelized with sugar and cinnamon to produce a delicious sweet dish.


The two layers are paired together in the serving dish, then they are decorated with a sprinkle of sesame seeds and quail eggs before being served warm with Moroccan bread

Dada Halima has been cooking professionally for almost a decade, and has been a professional chef at a famous Marrakech restaurant for 5 years.
