ABOUT THE RECIPE

As part of the Moroccan culture, Tanjia is the only dish that can physically take you to travel to Marrakech without any tickets. It is known for being cooked in a traditional way; under the ground and in coal where the filled pot needs to be cooked in the hot embers and ash for a couple of hours. However, if you do not want to miss the experience, this dish can also be prepared in an original way; in a pressure cooker.


It is a delicious classic recipe that demands very few ingredients. Mainly, you will need either meat, beef, chicken or lamb as you desire. The meat is slowly cooked with cumin, smen, saffron threads, preserved lemons, garlic cloves, and olive oil for flavor. All put in one pot, you can wait for merely some minutes and your meal will be ready. The result will quench your hunger if your stomach were rumbling at the thought of the Moroccan Tanjia.

Special tools / ingredients: All ingredients are easily available in supermarkets or online stores.

In 2011 she graduated from a top culinary school in Marrakesh before becoming a professional restaurant chef.

Dada Nadia specializes in Moroccan cuisine, with a particular emphasis on regional Marrakesh dishes such as the tanjia.
