ABOUT THE RECIPE

Lentils with carrots is a classic Morocco dish that is especially popular when the temperatures start to drop. This stew is simple, affordable, and nutritious, plus everyone loves how it tastes!

Lentils with carrots is a delicious vegetarian (easily turned vegan) meal that is made with lentils and carrots as its main ingredient, along with fresh parsley and cilantro, tomato paste, onions, garlic and warm spices (including ginger, paprika, chili, cumin, and turmeric).

The traditional lentils used in this recipe are known as French Lentils, which cook quickly but maintain their shape after cooking. The carrots in the dish add a wonderful note of sweetness to the dish, but if you're not a fan of carrots, feel free to replace them with pumpkin or the squash of your choice.

Dada (Chef) Siham is a professional Moroccan chef with over three decades of experience under her belt. She is a true walking archive of Moroccan culinary knowledge and history.

Chef Siham learned to cook from her grandmother, who encouraged her to attend the best culinary institute in Morocco.

After graduating, she worked as a chef at multiple renown institutions before starting her own business. She has now been running a major catering service in Fez for over 2 decades, supplying weddings, baptisms and other special occasions with authentic Moroccan dishes.
