ABOUT THE RECIPE

Couscous is perhaps the most famous dish in Morocco, but it also refers to the grain that is used as the basis for the couscous plate. This staple ingredient is commonly made with semolina. However, many Moroccan families make use of other grains such as millet, whole wheat, and barley in their preparations.


Although the cooking and serving methods are the same for all the types of grains, there are subtle differences in how much water they absorb and how much steaming they may require to get tender.


In this course, the dada is making barley couscous (Dchicha) with beef and vegetables. This dish makes an appealing lunch or dinner, packed with nutrients and fiber, and most importantly incredible flavors. The barley comes out so soft after three rounds of steaming. Then, it is topped with tender meat and a rich sauce that includes chickpeas and vegetables.

Special tools / ingredients: All ingredients are easily available in supermarkets or online stores.

Dada (Chef) Fatima Ezzahra is professional Moroccan chef. She has learned how to make authentic Moroccan dishes at home, in the Marrakech region, at a young age from her mother and grandmother.


She has multiple years of experience as a caterer, and has been working for over 3 years as a sous-chef at one of the most renowned restaurants in Marrakech.
