ABOUT THE RECIPE

Beef tagine with caramelized dried figs is a unique Moroccan dish that is served during celebrations as well as for special family meals.


The beef and fig tagine, is yet another sweet and savory Moroccan dish composed as the name indicates of two layers: a meat layer and a dried figs layer.

The meat layer, which is the savory layer, can be made with either beef or lamb, cooked in an aromatic base of onions, garlic, and spices, including saffron threads, cinnamon, ginger, and turmeric.


The second layer, which is the sweet layer, is made with dried figs, that are caramelized with sugar and cinnamon.


The sweet figs and their syrup are served on top of the tender meat stew, then the dish is decorated with walnuts. The tagine is always served with Moroccan crusty bread, which is used to soak up the meat sauce.


Special tools / ingredients: All ingredients are easily available in supermarkets or online stores.

ABOUT THE CHEF

Dada (Chef) Saida is a professional Moroccan chef with over four decades of experience under her belt. She is a master cook who learned how to make authentic Moroccan dishes from her mother and her grandmother.

She has worked as a personal chef and caterer for most of her adult life, specializing in celebration dishes from her native Marrakesh region where she has lived for her entire life.
