ABOUT THE RECIPE
Beef Tagine with Meslalla Olives is a popular dish in the Meknes region on Morocco. It features a succulent beef base cooked in flavorful spices, that is then topped with vibrant green olives.
The addition of the Meslalla olives gives this dish an interesting twist. Meslalla olives are a unique variety of olives cultivated in Morocco. These large, mild olives have a distinctive smoky-sweet flavor and creamy texture. They are traditionally pickled in a brine of garlic, vinegar, lemon juice and herbs giving them a delightful flavor profile that ranges from sweet to salty to zesty. When cooked, these olives have a unique, sweet-tart flavor with a slightly salty aftertaste. If you do not have access to Meslalla olives, then feel free to use any green olive variety you have access to, such as castelvetrano or manzanilla.
Follow the dada's instructions and learn how to make this delicious meal.
