They are traditionally pickled in a brine of garlic, vinegar, lemon juice and herbs giving them a delightful flavor profile that ranges from sweet to salty to zesty. When cooked, these olives have a unique, sweet-tart flavor with a slightly salty aftertaste. If you do not have access to Meslalla olives, then feel free to use any green olive variety you have access to, such as castelvetrano or manzanilla.

Chef Siham learned to cook from her grandmother, who encouraged her to attend the best culinary institute in Morocco.


After graduating, she worked as a chef at multiple renown institutions before starting her own business. She has now been running a major catering service in Fez for over 2 decades, supplying weddings, baptisms and other special occasions with authentic Moroccan dishes.
