ABOUT THE RECIPE

Carrots are one of the most popular vegetables in the Moroccan diet. They are used to make some of the most popular dishes including salads, tagines, and juices.


In this recipe, the dada (chef) will show you one of the most popular savory carrot salads, called carrots with chermoula, or "khizo mcharmel" in Arabic. In most cultures, cooked side-dishes are called appetizers or dips, but in Morocco, these dishes are referred to as "salads."


This warm salad is very easy to make and requires only a few ingredients. It is made with tender steamed carrots that are tossed in a flavorful chermoula - the famous Moroccan marinade made out of garlic, spices, lemons and fresh herbs. You can also use this chermoula to flavor other steamed vegetables including potatoes, sweet potatoes, zucchini, cauliflower, etc...


Special tools / ingredients: All ingredients are easily available in supermarkets or online stores.

ABOUT THE CHEF

Dada (Chef) Najat is a master Moroccan chef with more than 10 years of experience under her belt.

She first learned to cook from her mother, who was a personal chef for over 40 years, and who taught her the art of Moroccan cuisine.

Chef Najat then went on to graduate from one of the top Moroccan culinary schools before she worked as a chef and a recipe developer. Today, she runs a catering business in the capital city of Rabat.
