Fdawech is a classic delicacy from the city of Rabat that is often served for family gatherings.


This savory dish is made with chicken that is cooked with a flavorful onion sauce. The vermicelli (called Fdawech) is first steamed in a double boiler, then cooked in the flavorful onion sauce. The chewy texture of the vermicelli mixed with the tenderness of the chicken, gives this dish its distinct taste and texture.

Zineb is a highly skilled Moroccan cook who was born and raised in the capital city of Rabat.


From a young age, she learned the art of Moroccan cuisine from her mother, who is also a native of the capital city, and who taught her all the classic Rbati recipes that were passed on to her from her mother and her grandmother.


Zineb represents the new generation of Moroccan chefs, who are preserving traditional Moroccan recipes, while making sure to adapt them to the demands of the modern world.
