ABOUT THE RECIPE

Cigars in Morocco are a special type of crunchy, delicious appetizer that is served at almost every occasion throughout the year, especially on the Ramadan table.

To achieve their traditional crispy golden exterior, the filling is rolled up in "warqa", a thin pastry made from flour and water, which is similar to phyllo dough but more moisture resistant and turns crispy when cooked.


In Morocco, families make large batches of cigars to freeze ahead of Ramadan, then fry or bake them right before serving.

In this course, the dada is filling the cigars with ground beef and mushrooms. Follow along with this course to get clear, step-by-step directions on how to create these delicious Moroccan spring rolls!

ABOUT THE CHEF

Dada (Chef) Najat is a master Moroccan chef with more than 10 years of experience under her belt.


She first learned to cook from her mother, who was a personal chef for over 40 years, and who taught her the art of Moroccan cuisine.


Chef Najat then went on to graduate from one of the top Moroccan culinary schools before she worked as a chef and a recipe developer. Today, she runs a catering business in the capital city of Rabat.
