ABOUT THE RECIPE

Pastilla is a classic Moroccan dish that consists of different types of cooked fillings wrapped in pastilla sheets, also known as Warqa, which is similar to phyllo dough.

There are many types of fillings used with pastillas. The most popular is chicken, but seafood pastillas, and meat pastillas are also very popular.


In this course, the Dada (chef) will show you how to make a vegetarian variation using only vegetables. This recipe requires only a few ingredients, mainly vegetables, which are sauteed with olive oil and spices, then filled in the pastilla sheets. The dada chooses to make mini pastillas, which are ideal for individual servings as well as appetizers, but you can also make a large pastilla, which is great for sharing. Once the pastilla is ready, you can fry it, or bake it for a healthier version.


Special tools / ingredients: All ingredients are easily available in supermarkets or online stores.

Dada (Chef) Naoual is a professional Moroccan chef from the Marrakech region.

Dada Naoual has a strong passion for authentic Moroccan cuisine, which was passed on to her at a young age from her mother and grandmother who were both avid cooks. She then attended a top culinary school in Marrakech, and continued to learn the art of cooking from fellow dadas.

Dada Naoual represents the young generation of Dadas who are carrying the torch of Moroccan cuisine forward. She has multiple years of experience as a caterer, and has been working for over 3 years as a chef at one of the most renowned restaurants in Marrakech.
