ABOUT THE RECIPE
Soups are an essential component of the Moroccan table. They are made all year around, but are especially popular during the month of Ramadan, since they are often the first dish eaten to break the fast and to replenish the body after a long day of fasting.
In this course, the Dada (chef) is making onion soup. It is not a traditional soup like Harira, but it is a very popular soup in Morocco.
All you need to make this soup is a leek, onions, garlic, and a potato to thicken up the mixture.
This soup is a perfectly healthy addition to your meal plan. it comes together very quickly, and works perfectly as a light lunch or dinner starter. Make it over the weekend, store it in the fridge, then reheat it when you're ready to enjoy it.

She has multiple years of experience as a caterer, and has been working for over 3 years as a sous-chef at one of the most renowned restaurants in Marrakech.
