ABOUT THE RECIPE
Warqa is a thin sheet of pastry that is used to make classic Moroccan pastries such as pastilla or briwat. It is similar to phyllo dough, but has a crispier texture when cooked.
Warqa is made with two basic ingredients: flour and water. The dough is then stretched very thinly and cooked on a hot skillet for less than 20 seconds before being peeled off by hand.
