ABOUT THE RECIPE

Eggplant Zaalouk Mechoui is a popular Moroccan cooked salad that is served as a side-dish with chicken or meat tagines. It is a popular dish that uses only a few ingredients, but packs a punch of flavor!

The combination of eggplants, tomatoes and spices is very popular across the Mediterranean. Such dishes include baba ganoush, stuffed eggplant, eggplant parmesan, etc. Zaalouk is the Moroccan take on the popular combination and can be served as a side dish or as a dip.

All you need to make this recipe are eggplants, tomatoes, garlic, olive oil and a few staple spices. It is very simple, and quick to make in a skillet. Simply roast the eggplants for that wonderful smokey flavor, then add them to the flavorful tomato base, and your dip is ready to be enjoyed!

Dada (Chef) Siham is a professional Moroccan chef with over three decades of experience under her belt. She is a true walking archive of Moroccan culinary knowledge and history.

Chef Siham learned to cook from her grandmother, who encouraged her to attend the best culinary institute in Morocco.

After graduating, she worked as a chef at multiple renown institutions before starting her own business. She has now been running a major catering service in Fez for over 2 decades, supplying weddings, baptisms and other special occasions with authentic Moroccan dishes.
