ABOUT THE RECIPES

This tomato and onion salad, often named `The Moroccan Salad’ or "Shlada", although simple, is the flagship of Moroccan tables. Chopped red onions and juicy ripe tomatoes are the main ingredients of this salad, along a dash of fresh cilantro.


"The Moroccan salad" is the ideal introduction to Moroccan salads. It is not the seasoning that makes it flavorful (since it only has salt and pepper), but rather the degree of freshness of produce and the beautiful blend of lemon juice and olive oil.


This salad is the ultimate summer-time salad (although in Morocco it is served throughout the year), it is usually served with grilled fish in street food stations or along grilled peppers and olives. Enjoy it in small bowls or plates with crusty homemade bread that soaks up all the juices of the salad.

ABOUT THE CHEF

Dada (Chef) Najat is a master Moroccan chef with more than 10 years of experience under her belt.


She first learned to cook from her mother, who was a personal chef for over 40 years, and who taught her the art of Moroccan cuisine.


Chef Najat then went on to graduate from one of the top Moroccan culinary schools before she worked as a chef and a recipe developer. Today, she runs a catering business in the capital city of Rabat.
